“Farm to Table”
If you have ever spent a day in a working kitchen, you know how important fresh ingredients are and how they can make all the difference between good food and great food. Join Chef Paul Verica, Executive Chef at The Club at Longview, for a cooking demo using all local products. Chef believes great food, often simply prepared and even more simply garnished, is not the person or mind behind the stove, but rather the farmer, the forager and the grower. Trends come and go, but there is one that has been making itself known over the last few years that I hope stays around for a while - the farm to table concept.

 “From the Vine to the Pan”
Join Chef Todd Mohr from Savor Hospitality and learn the fascinating cooking method of braising! Learn how the acids in wine aid in tenderizing meats while adding flavors to any dish. You’ll witness a braising cooking method using white and red wines to create two different dishes: Chicken Marsala and Beef Bourguignon.

“Quick & Easy Entrée”
Entrée Vous is back to cook up some Greek Meatloaf (Meatballs). The meatballs will be made from scratch, shaped and browned and simmered in a sauce made from scratch.  A perfect meal for the Fall and Winter months! Chef Mackie will provide you with the recipe to take home along with wine pairing and side item recommendation lists to serve with the entrée. Be sure to get there in time to enter the raffle at the beginning of the seminar for a chance to win a $25 Gift Certificate!

 “Blazing & Deglazing with Wine”
Come learn the three necessary steps in a basic sauté cooking method from Savor Hospitality’s, Chef Todd Mohr. Find out how to tell when to turn an item over in the pan and how to tell when it’s completely cooked. Finally, you’ll learn how to raise those brown bits on the bottom of the pan (the pan “fond”) to make a flavorful sauce for the item just cooked. On today’s menu: Chardonnay Honey Caper Chicken.

“Quick & Easy Appetizer”

Shawn Mackie from Entrée Vous will present a hands-on cooking demonstration of Southwest Egg Rolls. Watch and learn as the rolls are filled, assembled and fried up for your enjoyment. Use this recipe at your next dinner party- the recipe will be provided for you to take home as well as a wine pairing recommendation list.  Enter the raffle at the beginning of the seminar for a chance to win a $25 Gift Certificate!
